  • 1 cup Medjool Dates
  • Zest from 1 lemon
  • Juice from 1/2 lemon

There are lots of ways to make energy balls but this is one of our favourites! The zingy lemon taste is so delicious and refreshing, and there’s no added sugar or refined carbs, so they’re really healthy too. They are a great way to get an energy boost between meals, or before or after a workout. Cashews and medjool dates are great sources of protein, energy and fibre, and they digest slowly so you’ll stay fuller for longer. The chia seeds are an added power-house of nutrients, containing protein, fibre, antioxidants and omega 3!

Method
  1.  Add 1 cup cashew nuts,  2 tbsp cashew butter,  1/2 cup desiccated coconut, zest from 1 lemon, juice from 1/2 lemon and 1/4 cup chia seeds to the blender and blend until all the nuts have broken down.
  2.  Add in 1 cup of medjool dates and blend again until the mixture forms in to a sticky consistency.
  3.  Roll in to bite-sized balls and coat in desiccated coconut.
  4.  Once all your super healthy lemon energy balls are ready, pop them in to the fridge and they will keep for one week.
